6 lasagna noodles (fresh or dry—cook if needed)

6 slices of ham (smoked, regular, or even turkey)

1 small onion, chopped

4 tbsp butter (about 50g)

1/3 cup flour (about 55g)

2 ½ cups milk (600ml, preferably 2%)

1 egg yolk (optional, for extra creaminess)

½ tsp salt

Black pepper to taste

A pinch of ground nutmeg

1 ½ cups shredded Emmental or mozzarella (140g)

8 oz sliced raclette cheese (or swap with cheddar, gouda, or Monterey Jack)

In a saucepan, melt butter. Add chopped onion and cook until soft. Stir in flour and cook for 1 minute. Slowly whisk in the milk. Add salt, pepper, nutmeg, and egg yolk. Cook on medium heat for 7–8 minutes, stirring until smooth and thickened. Add 1 cup of shredded cheese and mix until melted.

Preheat your oven to 400°F (200°C). Butter your baking dish. Spread a bit of sauce on the bottom. Layer noodles, sauce, 2 slices of ham, and some raclette slices. Repeat twice. Finish with a final layer of noodles, the rest of the sauce, and top with the remaining shredded cheese.
