1. Preheat the oven to 160 °C (fan).
2. Make up the tea and allow to steep for at least 5 minutes. Put the dried fruit in a large mixing bowl, pour in the hot tea and stir. Leave for another 5 minutes.
3. Add the mixed spice, then pour in both the flours and crack the egg into the bowl.
4. Once all the ingredients have been added, mix everything together thoroughly.
5. Line a 900g (2 lb) loaf tin with baking parchment, or a loaf tin liner, and spray with low-calorie cooking spray. Spoon the batter into the tin and spread out evenly.
6. Bake on the bottom shelf of the oven for 1 hour. The loaf will look browned and well-cooked on top, and will be dense but not doughy inside.
